In this video I share with you the process and recipe for how to make a farmer sausage.

It is a great sausage that is very simple and easy to make.

Here is the the Farmer Sausage Recipe:

Salt 16g/kg
Coarse Black Pepper 4g/kg
Cure #1 3g/kg
Sodium Erythorbate 0.5g/kg
Binder 10g/kg
Water 100g/kg
Liquid Smoke 1g/kg

Smoking Process
Step 1 dry up to 150f for 1.5hrs or until tacky
Step 2 Smoke 155f to 160f for up to 2hrs
Step 3 Cook to internal temperature of 160f 71C at 185f with humidity
