Bosch 1600H tankless water heater cutting off/won't stay on

We were having intermittent problems with our Bosch 1600H. It would sometimes come on and other times not. We were having it cut out in the middle of showers/usage to the point we had to run water at the sink as well as the shower to try and keep it on. We thought it might be a voltage thing from the hydro generator (Which had previously gone out and we replaced in this video: https://youtu.be/-_7CR1oD-ak) but whenever we checked it was a solid 2.8V (AC) which was what it should have been putting out. Finally we found a reviewer on amazon (never saw another mention of this in all our research) who told us about a microswitch that can get out of adjustment. It's supposed to be self adjusting but after we reset it to default so far it's worked better than it ever did.
