Crunchy Oat Cookies
An easy and quick oat cookie recipe. Crunchy and delicious with a nice cup of coffee, tea or just on their on.
Ingredients:
¾ Cup Whole wheat flour
1 ½ Cup Porridge oats
100gms Butter unsalted
¾ Cup Light brown sugar
1 Tsp Soda bicarbonate
1 ½ Tsp Ginger powder
1 Tbsp Honey
3 Tbsp Crystallised/Candied ginger
¼ Cup Sultanas or raisins
¼ Tsp Salt

Directions:
1. In a pan on medium low flame add butter, honey and brown sugar.
2. Mix well and cook till it melts.
3. Take the pan off the heat.
4. Now add ginger powder, candied ginger, salt and sultanas.
5. Mix well.
6. Add whole wheat flour, oats and soda bicarbonate.
7. Mix well till it all comes together.
8. Spoon onto baking tray with a little distance in between as cookies spread while baking.
9. Bake at 180 degree C. for 10-12 minutes or till light golden brown in colour.
10. Let it cool on the tray before serving.
