Sugar Cream Pie with Brown Sugar

1 store bought 9” pie crust
1/2 cup sugar
1/2 cup brown sugar
1/4 cup cornstarch
2 cups heavy cream
1/2 cup butter, cubed
1 tbsp. vanilla
cinnamon, for sprinkling

Instructions

1. Par bake pie crust per instructions on package.

2. Cool crust on wire rack and reduce oven temperature to 375ºF.

3. In a large saucepan, whisk together sugars and cornstarch. Stir in heavy cream. Bring mixture to a boil over medium heat, stirring frequently. Once it starts to boil, reduce heat slightly to a simmer. Cook and stir for 2 minutes, or until thickened. Remove from heat and immediately stir in butter and vanilla.

4. Pour into par-baked crust and sprinkle filling with dusting of cinnamon. Bake for 20 minutes or until golden brown. Remove from oven and cool completely. Refrigerate for at least 1 hour. Store any leftovers in the refrigerator.
