Amy Roloff Making Traditional Holiday Cookies - Snowball Cookies

This is a traditional cookie I have made during the Christmas holiday since I was a child. I made it with my Mom and by myself for years. Then I made it with my kids and for my kids, for Chris and I and now with and for my grandkids. This cookie isn’t just for the Christmas holiday. It’s a good cookie anytime of the year – Valentines Day, spring or summertime. Well, anytime is a good time.
It’s an easy cookie to make. This is one cookie I don’t think you want to substitute out butter in the ingredients. Butter makes this cookie and gives it that rich taste, the powdered sugar gives it that little sweetness and the nuts give it a little crunch. This cookie is scrumptious.

Ingredients:
2 cups of King Arthur Flour
½ cup Powdered Sugar
½ - 2/3 cups of finely chopped nuts (pecans or walnuts)
¼ tsp Salt
1 cup Butter, softened
1 1/2 teaspoons of Vanilla
Powdered Sugar (for rolling and dusting cookies in)

Directions:
Preheat oven 400 degrees
* In a bowl, combine the flour, ½ cup powdered sugar, salt and the chopped nuts and mix well.
* Add the vanilla to the butter and combine the soften butter mixture until completely incorporated in the flour mixture and it begins to come together.
* Take about a tablespoon of the cookie mixture and roll into a ball. If necessary dust your hands with flour to prevent any sticking that may happen. Continue with the rest of the dough and roll into balls.
* Bake in a preheated oven, till set but not browned, for about 12-15 minutes (depending on your oven)
* Cool slightly and then roll cookies in powdered sugar. Cool completely and roll into powdered sugar again.
