Rice:
2C dried white rice
2C water
14oz coconut milk
1tsp salt
1tbsp honey
1. bring ingredients to boil, reduce heat, cover with lid and cook till liquid is absorbed and rice is tender.

Shrimp:
2lbs shrimp
1tbsp avocado oil
1tbsp lime juice
1tbsp chili powder
1tsp cumin
1tsp onion powder
1tsp pepper
1/2tsp salt
1/2tsp cayenne
2 tbsp butter
1/4C cilantro
1tsp cornstarch + 2 tsp water

1. toss shrimp in oil, lime juice & seasonings
2. saute till pink, add in butter & cilantro- cook for 3-4 min
3. stir in cornstarch slurry & stir till sauce thickens
4. serve over rice w/ cilantro & avocado
