How to make Chur Chur Naan/ Paratha

INGREDIENTS TO MAKE DOUGH
-11/2 cup wheat flour
-1 cup mida (plain flour)
-1/2 cup makki ki atta (cornmeal/maize)
-3 tbsp Ghee
-1/2 tsp ajwain seeds (carom seeds)
1/2 sugar powder
-less then a half baking soda
-Salt to taste
-INGREDIENTS FOR STUFFING
-3-4 medium boiled & mashed potatoes
-1 cup grated paneer
-Handful chopped coriander leaves
-Spices:1 tsp chili powder, 1/2 tsp roasted cumin power, 1 tbsp coriander seeds coarsely ground,1 tsp dry mango powder, 1/2 tsp Garam masala powder, 1 tsp black pepper powder, 2 tbsp anardana (pomegranate seeds), salt to taste
-5-6 garlic & 2 spring onions sauté slightly brown with little oil
-Handful chopped coriander leaves, 3-4 green chilies
METHOD
-TO MAKE DOUGH
-Combine wheat flour, Makki ki atta, plain flour/mida, Ghee, ajwain, sugar, baking soda, salt
-mix all together with you hand into nice crumble, add water in small portions & knead a soft dough
-Add 1 tbsp more Ghee massage well, cover & keep the dough aside for 30-45 minutes to set.
-LETS MAKE THE STUFFING
-Combined together mashed potatoes, grated paneer, coriander leaves, green chilies, sautéed garlic & spring onions,
Spice powder: chili, cumin,
coriander,dry mango, Garam masala, black pepper, dry anardana, salt to taste.
-Mix them well and set aside
-LETS MAKE THE CHUR CHUR NAAN.(WITHOUT THE STUFFING)⭐️
-Now take enough dough for making of 1 Chur Chur paratha spread them with rolling pin, spread butter/ghee dust with flour
-Now roll or fold to make a layers
(Fold dough 4-5 times for flaky & crispy layers)
-Now sprinkle top on the dough peda chopped coriander leaves and sprinkle, kalonji seeds, roll out the paratha into thin disk/circle shape
-Use your hand and apply water on one side of the Naan
-Use That side to stick that Naan on the pan.water will allow to stick in the pan
-Use normal tava to make the Chur Chur Naan.
-Since the chur chur naan is cooked by putting the tava upside down the flame.
-you could also cook direct on the gas top, for that place the rolled Naan on to the pan, cook each side for 2 seconds flipping twice.then with a help of a tong remove the Naan from the pan and cook directly on the gas directly, cook each corner well
-Once Naan is cooked apply butter/ghee.
-Before serving crush/Chur Chur The Naan, serve with green chutney pickle, raita, chole.
-TO MAKE CHUR CHUR 💥PARATHA WITH A STUFFING
-Now give it a round shape with your finger add the potato paneer mixture stuffing close them all sides
-Sprinkle spread kalonji, chopped coriander leaves and roll it again.
-Heat pan/tawa
-Place the rolled paratha
-Cook both the side by applying butter/ghee
-Once you see the paratha golden brown spots appearing
-make it more crispy
-Remove from the pan
-crush/Chur chur the naan before serving.
-Serve with green chutney and cucumber Rita, pickle
-Enjoy!!!
