42 Day Dry Aged New York Strip! CookPerfect Meat Probe, Weber Kettle.
DIY Umai bags, reversed seared on the Weber Kettle with the Slow ’N Sear.
• Started with a 10lb whole NY Strip, choice cut.
• Took the whole NY Strip and placed in Umai Dry bag.
• Blotted the NY Strip with paper towels to remove some of the moisture in the bag.
• Vacuum sealed the NY Strip in the Umai Dry Bag trying to get as much air out of the bag as possible.
• Placed the NY Strip in the fridge on a cooling rack so the meat could have air around the entire piece of meat.
• After 42 days we removed and cut open the bag to see what we got.
• Cut into slices and removed all of the crusted edges
• Set up the Weber grill with the Slow ‘N Sear for a reverse sear.
• Used the CookPerfect Meat probes to monitor the temperature.
• When we reached 70 degrees turned them and flipped them.
• When they reached 100 degrees, started to sear them off going for a medium rare.
• Seared each side only 1 minute per side and pulled them, and let rest.
Summary: We dry aged for 42 days, sliced 2 steak out of the strip and trimmed the crust off of the edges. These had a super strong beef flavor and were very good. Jack thought the same once he had a chance to taste them.
As I mentioned on the video, we chose the smallest NY Strip I could find because I wanted to keep the cost down in case this did not work. Our next time will be a Ribeye.
