Better Than PANERA! Broccoli Cheddar Soup | So Easy | One Pot Meal | Very Budget Friendly
Why pay all that money to eat out when you can make it better at home. So easy! This recipe is better than Panera. Paired with my Dutch oven bread, you can’t beat it for a frugal, budget friendly meal. Leftovers can be frozen for up to 6 weeks. Reheating on the stover will help any separating that occurs from freezing. However, separating is not definite and does not change the taste.
Better Than Panera Broccoli Cheese Soup
1/4 cup butter
1 small onion; chopped
1-2 stalks celery: chopped
1/4 cup flour
1 1/2 cups chicken broth
2 cups half-and-half
3 cups chopped fresh broccoli (could use frozen. fresh is better)
1 cup grated carrot
8 oz. sharp cheddar cheese (more if desired. This is where your good flavor will come from)
1/2 cup mild cheddar (I used Monterey Jack)
salt and pepper to taste
Melt butter in stock pot on medium-high heat.
Add onion and celery. Sauté until lightly browned.
Add flour and cook for a couple minutes to remove flour taste. Whisk continuously.
Slowly add chicken broth and whisk.
Add half-and-half; whisk.
Add broccoli and carrots and season with salt and pepper.
Bring to a boil. Reduce heat and simmer for 20-30 minutes until broccoli is tender.
Add cheeses.
Remove from heat.
Add more salt and pepper if needed.
