Ingredients
6 oranges (for juicing and peel)
2 additional oranges (peeled and diced)
1 lemon
Granulated sugar (equal in weight to the total mixture of juice, peel, and diced fruit)
Optional: Muslin cloth or cheesecloth (for bundling pulp and seeds)

Instructions
Juice the oranges: Cut 6 oranges in half and juice them. Pour the juice into a large bowl. It’s okay if some pulp gets in.
Scoop the pulp: Use a teaspoon to remove the remaining pulp from the orange skins. Set this aside.
Prepare the orange peels: Cut the empty orange halves into quarters. Scrape out the white inner pith (this part is bitter) using a spoon or knife, and discard it. Thinly slice the cleaned orange peels and add them to the bowl with the juice.
Dice 2 fresh oranges: Peel them and remove as much of the white pith as possible. Dice the flesh and add it to the bowl.
Prepare the lemon: Juice the lemon and pour the juice into the bowl. Cut the juiced lemon into quarters, remove the pulp, and scrape out the white parts. Discard them. Thinly slice the lemon peel and add it to the bowl.
Add natural pectin: Place the reserved orange pulp and seeds in a piece of muslin. Tie it into a bundle and squeeze it over the bowl. The juice from this acts as natural pectin to help thicken the jam.
Measure the mixture: Place a large pot on a kitchen scale and pour in the entire mixture (juice, peels, and diced fruit). Note the weight. Add an equal amount of granulated sugar (1:1 ratio). For example, if your mixture weighs 700g, add 700g of sugar.
Cook the jam: Stir everything together and cook over medium-high heat, stirring occasionally. Let it simmer until it thickens—this usually takes 20–30 minutes.
Test for doneness: Reduce heat to low. Drop a tablespoon of jam onto a plate and refrigerate it for 10 minutes. If it runs when you tilt the plate, it’s not ready. Continue cooking for 5 more minutes and test again. When it holds its shape and doesn’t flow quickly, it’s done.
Cool and store: Remove the pot from heat and let the jam cool completely. It will thicken further as it cools. Transfer to sterilized jars and seal.
Storage: Keeps for 1 month at room temperature or in the fridge.
