Thai Tom Yum Fried Rice with versatile homemade tom yum paste

Today we're making yet another fried rice - Tom Yum Fried Rice. I actually meant to make the typical Tom Yum Soup first, but then I had a huge craving for Tom Yum Fried Rice. This requires just a bit more effort than the usual fried rice, but trust me it's worth it.

Ingredients:
Serving for 2.

- 2 Cups of Rice
- 100g Protein of choice
- Sliced chicken meat
- Shrimps
- Veggies cus veggies are good for you
- I'm using Yau Mak Chye or Asian Lettuce
- 1 Onion
- 2 Cloves Garlic
- 3 Eggs
- Tom Yam Paste
- 1 lemongrass stalk
- 4-5 Kaffir Lime Leaves
- 1 tablespoon of Galangal or Blue Ginger
- 2 tbsp of Dried Chili Paste (see recipe: https://www.youtube.com/watch?v=Sahb_htEbXk)
- Tamarind juice
- Seasoning Sauce:
- 2 tbsps fish sauce
- 1 tbsp light soy sauce
- 1 tsp sugar (I’m using Palm Sugar syrup)
- Garnish with cilantro and a squeeze of Lime juice
