Saving MONEY, Eating HEALTHIER - the EASY WAY! What you missed last week
Brown Sugar Baked Beans Recipe
Here’s what you’ll need to make a fairly large mess of Baked Beans (feeds a family of 12 easily).
4 15oz cans of pork and beans or 2 28 oz cans - - or I actually found a large ( I think it was 3.5 lbs) can of baked beans. I don’t get anything fancy - just the good ole regular can of baked beans. I use Campbells or VanCamps.
I drain most of the juice. I find if you don’t overcook these you’ll usually be ok and your beans won’t turn out dry. Nothing worse in the world than mushy dried out baked beans. Keep a little of the juice in reserve is the wise thing to do.
1 1/2 cup of ketchup
1 cup of brown sugar (i prefer the dark more molasses one, but either works))
1/4 cup of real maple syrup
2 Tbs. Worcestershire sauce
1 Tbs. Yellow mustard
dash of Tabasco sauce ( to taste, but I usually like a lot more than I did for Sarah and Solo’s tribe)
1/2 cup of sweet onion - I love Vadalia here but use what you can find
4-6 slices of bacon, uncooked
Spray a 2 1/2 quart casserole with non-stick spray. Mix the ketchup, brown sugar, maple syrup, Worcestershire sauce, yellow mustard and Tabasco sauce. If you don’t have real maple syrup, use what you have, but the real syrup is best for the flavoring. I have tried it with the same amount of molasses syrup - but still prefer the maple.
Mix all that with the beans (mostly drained) and then stir in the diced onion. I do not remove any of the “pork’ or whatever that is in the can of beans. There is usually one piece or so of fatty looking meat in each can.
Place all that in the casserole dish and lay the uncooked bacon over the top.
Place in a 350 degree over for 55 minutes to an hour. Remove from oven when done. If you want to keep all that warm, cover tightly with foil or the glass casserole lid. Remember, baked beans dry out fast if left uncovered, especially in the oven, even if the oven is off. I am convinced this is where a lot of good baked bean are ruined. So - if you don’t plan on eating them right away - allow a bit more juice from the can to be used when mixing.
Of course - if your family or your picnic isn’t going to have that many people (this particular night we had 21 people, and It all got gobbled up) you can cut the recipe in half. Most everyone has a baked bean recipe and i’ve tried a lot - but I find I like the flavors here, and the kids certainly do!
