Meal Prepping with the WHOLE FAMILY
Broccoli Salad -
tons of broccoli (chopped)
bacon crumbles
chunks of cheddar cheese
red onion finely chopped
sunflower seeds
the dressing... equal parts mayonnaise and Greek yogurt. Add sweetener to taste and a pinch of salt.
Parmesan Tilapia -
3 pounds fish
melted butter on top
season with black pepper, red pepper flakes, and salt
the paste... just under 1/2 cup mayonnaise, 1 1/4 cup Greek yogurt, 1 1/4 cup Parmesan cheese, 1 teaspoon dill.
Broil fish 3 minutes, turn fish over and smear with the paste... broil another 4-5 minutes until golden brown and flaky.
Vegetarian Casserole -
2 cups brown rice
one can corn
one can black beans rinsed/drained
1 cup sour cream
1 cup salsa
1 cup cheese
1 can tomatoes with peppers (rotel)
Bake in 9x13 pan with another cup of cheese on top and green onions at 350 degrees for 50 min.
Deconstructed Stuffed Peppers -
4 pounds ground beef
3 12 ounce bags cauliflower rice
2 Tablespoons Worcestershire sauce
4 Tablespoons soy sauce
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons black pepper
6 green peppers chopped
2 cans diced tomatoes
2 14 oz. jars of pizza sauce
16 ounces cheese
Cook beef... add cauliflower rice and cook until soft... add sauces and spices... add peppers and cook until soft... add tomatoes and pizza sauce... top with cheese!
