Gluten Free Hefeweizen - Grain to Glass

This grain to glass video features my first attempt at a gluten free hefeweizen. This beer was made as a special gift for my wife's cousin, whose loves hefeweizen beers but has recently begun removing gluten from his diet. This beer will be served at his retirement party when he retires from the Milwaukee fire department later this year.

Grains:
52% pale millet malt
32% buckwheat malt
11% flaked quinoa
5% rolled oats

Enzymes:
Ondea Pro and Ceremex enzymes - 2ml per lb of grains

Hops (15 IBUs):
Hallertau mittelfrüh at 60 min (12.3IBUs)
Hallertau mittelfrüh at 15 min (2.6 IBUs)

Yeast: WB-06
