Homemade Apple Pie
Prep Time: 30 min
Bake time: 45 min
Servings: 8

INGREDIENTS
For the crust:
2 ½ cups flour
1 teaspoon sugar
1 teaspoon salt
¾ cups cold butter
¼ ice water (with the ice completely melted or removed)

For the pie filling:
6-7 cups tart apples (about 4-5 apples)
1 tablespoon lemon juice
½ cup sugar
½ cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 tablespoon butter
1 large egg white
Additional sugar

INSTRUCTIONS
Make the crust
1. In a sifter or fine-mesh sieve over a large mixing bowl, add flour, sugar & salt; then sift and set the bowl aside
2. Cut the cold butter into half-inch cubes & add half to the flour mixture. Captain’s Note: Don’t cube those pretty little fingers in the process!
3. Using a food processor (or potato masher or two knives, if that’s what you have!), mix and cut the butter into the flour until the flour begins to resemble a coarse grain. Add the rest of the butter and mix until the largest pieces are the size of a pea. Don’t be afraid to turn up the sweet beats of Ice Cube while you work. Arms should feel like a decent gym session if you don't have a food processor!
4. In your food processor or bowl, slowly add in ¼ cup ice water (without ice!) and mix just until combined and the dough sticks together
5. Take half the dough and form it into a disc, then cover it in plastic wrap. Do the same with the other half of the dough. Refrigerate for at least one hour. Captain’s Note: Don’t over-knead the dough - it will develop the gluten in the flour, making it tough. Who the hell likes a tough crust?!

Make the pie filling
1. While the dough is chilling, peel the apples, remove the core, and thinly slice. Add to a large bowl. Add the lemon juice and give it a ‘nasty’ (i.e. good) mix to coat the apples
2. In a smaller bowl, combine the sugar, brown sugar, flour, cinnamon, ginger, and nutmeg and whisk together
3. Pour the sugar mixture over the apples and mix to coat the apples

Assemble the pie
1. Once the dough has chilled for an hour or more, remove it from the refrigerator, and let sit on the counter to warm up slightly. Set the oven to 375°
2. On a clean counter or large cutting board, sprinkle a light dusting on flour. Lay one of the dough discs on the flour and roll out, starting from the center of the disc and moving out, using light pressure. Captain’s Note: Lift parts of the dough now and then to ensure it’s not sticking too much. Use a spatula or pastry scraper to un-stick it
3. When the dough is large enough to cover the bottom and sides of your pie dish, carefully lift it and place it in the pie plate, pressing gently so it lays flush against the corners and sides of the plate
4. Carefully pour or spoon the apple mixture into the prepared pie plate in an even layer. Add a few slices or chunks of butter on top of the apples
5. Roll out the second dough using the same techniques. Carefully lay the dough over the apples and press or crimp the bottom crust with the top. Cut off any excess around the edges of the pie
6. Cut 5 (or 7, if you’re feeling frisky) vents into the top of the pie crust
7. In a small bowl, whisk the egg white until foamy. Gently brush the top of the pie with the egg white and sprinkle with sugar
8. Cover the pie loosely with foil and bake for 25 minutes. Remove the foil and continue baking for another 20-25 minutes or until the crust is golden brown
9. When the pie is baked, let it rest for 20 minutes before digging in.

Captain’s Note: it will still be scalding hot. Eat with care & smile!
