Ingredients:

Pico De Gallo:
5 roma tomatoes
3 cloves garlic
1 jalepeno pepper
1/2 cup diced red onion
1/2 cup chopped cilantro
juice from 1 lime
1 pinch salt

Seasoning Mix:
1 tbs garlic powder
1 tbs paprika
1 tbs ground cumin
1 tbs onion powder
3 tbs kosher salt
1/2 tbs parsley flakes
1 tsp black pepper
*You may also break these ingredients in half

Chicken Chimichangas:
1 3/4 pound rotisserie chicken
1 tbs seasoning mix
6 oz sharp cheddar cheese
6 oz queso jalapeno cheese
7-8 medium flour tortillas
plain flour and water (make a paste)

Queso Dip:
1/2 pound white American cheese
2 tbs canned chopped green chile
2 tbs green chile juice
1 tbs pickled jalapenos
1 tbs jalapeno juice
1/2 tsp ground cumin
1/3 cup milk

Shrimp Street Tacos:
1 lb shrimp size 13/15
2 tbs butter
EVOO
1 tbs seasoning mix
Queso jalapeno cheese
flour/corn street taco tortillas
cilantro
red onion

Vegan Burrito bowl:
chickpeas
1 tbs seasoning mix
seasoned black beans
frozen corn
lettuce
pico de gallo
avacado slices
cilantro rice (salt, fresh lime juice and cilantro)

Other:
limes
cilantro
EVOO
parsley to garnish
cooking oil for frying
** I found the queso cheese at the gourmet cheese section at my local grocery store
