上海鮮肉月餅,酥皮正確的做法!Shanghai Style Meat-Stuffed Moon Cake!

Stuffing Recipe:
Ground Pork - 150-160g
Salt - 1/2 Tsp
Dark Soy Sauce - 1 Tsp
Sugar - 1/4 Tsp
Cooking Wine - 1/4 Tsp
White Pepper - Half of 1/8 Tsp
Ginger (Optional)
Water - 50cc

The crust is made of two types of dough.
The 1st dough is made with less fat, the ingredients are:
Flour - 1 Cup
Pork Fat or Butter - 30-35
Sugar - 1/2 Tbsp
Water - 100cc
Mix well, and let it rest for 30 minutes or more.
The 2nd dough is made with a lot of fat, the ingredients are:
Flour - 1/2 Cup
Pork Fat or Butter - 60-70g
Mix well and put it in the fridge so it's easier to work with.
Before baking the moon cakes, brush on some egg wash otherwise it will turn out pasty white.
