Cooking With Baba During Ramadan! Roasted Salmon, Shrimp Ceviche Salad, and Potatoes

Roasted salmon -
Season salmon with salt, pepper and olive oil
Broil salmon for 15 minutes or until done (this will depend on the size of your salmon. I would check it every 5 minutes or so to make sure you don't overcook)
Shrimp ceviche -
Ingredients: Shrimp, cucumber, bell pepper, green onion, tomato, cilantro, jalapeño, lime, salt, cumin, olive oil
1. Drop your shrimp into a pot of boiling water on the stove and cook until they start to get pink in color (5-10 minutes)
2. Transfer your shrimp to a bowl of ice water to stop the cooking process
3. Finely chop your vegetables
4. Add vegetables and shrimp to a bowl and season with salt, cumin and olive oil
Potatoes
Ingredients: Golden potatoes, red or yellow onions, salt, pepper, butter and olive oil
1. Chop your potatoes and onions
2. In a sauce pan, put 1 tbsp butter and 1-2 tbsp olive oil
3. When butter has melted and starts to bubble, add your potatoes and onions and cook on medium heat.
4. Add salt and pepper and continue to stir potatoes. Lower heat, and cover pan to finish cooking until potatoes are soft
