The great pizza cheese stretch is mastered here in two stages:

First at the Latteria Sorrentina facility west of Naples, where the milk is curdled, cooked, formed and balled by expert cheesemakers to form fior di latte - cow’s milk mozzarella.

Next at Yard Sale Pizza in East London, where shreds of this fior di latte are scattered and melted over a tomato base layer by the Rodrigo, an accomplished pizzaiolo, and then carefully stretched to great heights in the pinched fingers of two pizza-loving Londoners.
