Long Beans Braised Noodle

This is a homely noodle dish from northern China, if I’m not mistaken.
Usually, when we cook Cantonese dishes, the garlic is sautéed before most of the other ingredients, but this noodle dish adds the garlic at the end! It imparts a different flavour profile to the dish and do remember GARLIC GOES IN LAST :-)
Ingredients:
(Serves 5)

150gm pork belly, sliced
100gm lean pork, sliced
700g yellow wheat noodles
15 stalks long beans, sectioned into 2 inch pieces
3 cloves garlic, minced
2 shallots, minced
Chilli (optional)

1 Tbsp sugar
2 Tbsp light soy sauce
1 tsp dark caramel (amount depends on the initial caramelizing process)
1/2 tsp salt (if needed)
1 cup water or more
