Welsh Shortbread Pan Fried

1 cup all purpose flour
1 tsp baking powder
1/8 tsp cinnamon powder
1/3 cup raisins/sultanas
1/2 tsp salt
1/4 cup sugar
1 egg
2 Tbsp milk
1/2 cup cold butter

1. Sieve the flour and mix baking powder, salt and cinnamon powder together.
2. Add cold butter and rub into the flour mixture until it looks like bread crumbs.
3. Add sugar and sultanas and combine.
4. Add milk and beaten egg.
5. Add egg slowly so that it comes into a pliable dough. (Its ok if it's not used up)
6. If the dough is too sticky to handle, add a bit more flour a tablespoon at a time until it doesn't stick to your fingers.
7. Drop dough on work surface and with your hands, spread out to half an inch thick.
8. Cut out with a mould into rounds and keep aside.
9. Heat up non stick pan with a table vegetable oil on low heat and drop the cut out dough into the pan.
10. Cook on both sides until toothpicks come out clean.
11. Sprinkle sugar on top.
12. Serve with jam or honey whatever you prefer.
