Carob products contain high amounts of calcium, potassium, magnesium, sodium and phosphorus, which are the most abundant elements in carob fruits.[1] Carob pods contain 448 mg/kg extractable polyphenols comprising gallic acid, hydrolyzable and condensed tannins, flavonol-glycosides, and traces of isoflavonoids.[2] Recent studies have shown that gallic acid can reduce interleukin-6 expression by approximately 40% and inhibit reactive oxygen species production in cells by up to 75%.[3] Clinical trials have demonstrated that carob fiber consumption significantly impacts cholesterol levels: the consumption of carob fibre reduced LDL cholesterol by 10.5 ± 2.2%[3] in hypercholesterolemic patients.
