Pecan Log Rolls (easy version)
Pecan log rolls are my all time favorite. I did not know they were this easy to make. I want to thank my friend, Christy, for giving me the idea to make them. Here is the link to her channel:

Ingredients and Directions:
1- 7 or 7 1/2 ounce container of marshmallow creme
1 teaspoon vanilla extract
1 pound of powdered sugar, sifted
In a mixing bowl, mix your marshmallow creme and vanilla extract. Add your sifted powdered sugar and mix till smooth. Using your hands with this step will be helpful.
Once smooth, roll into small logs and place on some wax or parchment paper and place in the freezer till firm.
Around 12-16 ounces of caramel
2 tablespoons water.
You can melt your caramel over a double boiler or in the microwave.
Around 2-2 1/2 cups finely chopped pecans.
Dip your log rolls in the caramel, then in the pecans. Place on some parchment paper and place in the freezer or fridge just till the caramel is set. Before slicing and eating, I would let them set out at room temp. for a few minutes. Store in an air tight container. Enjoy!
