🛒 Ingredients:
✔ Raw Jackfruit (Kathal) – 300g, cut into chunks
✔ Basmati Rice – 1.5 cups, soaked for 30 minutes
✔ Onions – 2 large, sliced thinly
✔ Yogurt (Curd) – ½ cup
✔ Asafoetida(hing)– ½ tbsp
✔ Tomatoes – 4 medium, pureed
✔ Ginger-Garlic Paste – 1 tbsp
✔ Whole Spices: Bay Leaf, Cloves, Cardamom, cumin seed
✔ Biryani Masala – 1 tbsp
✔ Turmeric, Red or Kashmiri Chili Powder, Coriander Powder – 1 tsp each
✔ Cumin powder ½ tbsp
✔ Cinemom
✔ Saffron (Optional) – Soaked in warm water
✔ Mint & Coriander Leaves – For fresh aroma
✔ Ghee or Butter – 2 tbsp
✔ Smoked Charcoal – For Dum Cooking Effect
✔ Wheat Dough (Atta paste) – To seal the Matka
🔥 Step-by-Step Cooking Process
1️⃣ Marinate the Jackfruit (Game-Changer for Flavor!)
Boil the Jackfruit first then Take another bowl for Marinatation.( Boil 75 %)
In a bowl, mix jackfruit, yogurt, ginger-garlic paste, red or kashmiri chili powder, turmeric,cumin powder and biryani masala.
Let it marinate for at least 30 minutes for deep flavors.
2️⃣ Prepare the Biryani Base in Pan (Matka Magic Begins!)
Heat ghee/Oil in a pan, add whole spices (bay leaf, Asafoetida, big cardamom, cinomom,Star,green chilli).
Add sliced onions and sauté until golden brown.(Seprated fry)
Add tomato puree and marinated jackfruit; cook until oil separates.
NOTE:- Cook Rice Separate Then Use For "Biryani Layring"
3️⃣ Dum Cooking in a Clay Pot (Matka)
Transfer the jackfruit and rice mixture into a clay pot (Matka).
Layer with saffron water, fried onions, mint, and coriander. (2-3 layer in Matka)
Cover with atta dough to seal the steam for authentic Dum Biryani taste.( steam 5-7 minut)
4️⃣ Signature Smoky Effect for a Restaurant Touch! 🔥
Heat a small charcoal piece until red hot.
Place it in a small bowl inside the Matka, add ghee on top, and quickly close the lid.
Let it sit for 10 minutes to absorb the smoky aroma.
