Chocolate Chip Cookies (Levain Style) - Bánh Quy Socola Tan Chảy
Levain style cookies - chocolate chip flavor recipe:
90g (3/4 cup) cake flour
110g (1 cup) bread flour
1/2 tsp baking soda
1/4 tsp salt
115g (1/2 cup) cold butter
1 egg + 1 egg yolk
80g (6 tbsp) white sugar
100g (8 tbsp) light brown sugar
80g (more than 1/2 cup a little bit) walnuts (chopped)
150g (1 cup) chopped dark chocolate

**** Tips:
You want the melted chocolate in the middle so do not chop the chocolate (and same for walnuts) too fine (let them be chunky)
Under bake is the key for gooey and chewy cookies so I bake them at high temperature in short time (in my recipe: 180C with fan for 14 minutes)
The recipe calls for cold butter so please use cold butter
Shape the cookies before chilling them in the fridge otherwise the dough becomes too tough to shape
Chilling the dough in the fridge before baking helps to keep the cookies higher (like Levain bakery style) so the cookies won't spread a lot when they are baked
