Baigan (Eggplant) & Eddo Curry- Episode 505

Ingredients and Measurements:
To make the curry paste:
2.5 tbsp. curry powder
1.5 tbsp. masala
1/2 tbsp. ground geera
2 tbsp. green seasoning
1 seasoning pepper/pimento pepper chopped
5 wiri wiri peppers crushed
6-8 cloves garlic crushed
water to mix

To make the curry:
3 tbsp oil (you can adjust this to the amount of eggplant used)
1 tsp. geera/cumin seeds
curry paste (see above)
salt to taste
all purpose seasoning to taste
1 large onion sliced chopped
3 scallions chopped (OPTIONAL- I didn't have any)
4-5 japanese eggplants peeled/sliced (you can use 2 large regular eggplants)
5 small eddos cut in 1/2 (you can use as much as you would like)
water to cook
