Making a REAL Burger from Carrots

I recently made ground beef taco meat from carrots and I wanted to take this 1 step further! Could I make a beyond burger style burger from carrots? Yup and its good!
I'm going to move on from carrot beef, but let me know what other types of vegetables you want to see me make vegan beef from?!
