Pao de Lo (Portuguese Sponge Cake) -Recipe- | Ep #2
9 eggs separated
2 cups sugar
2 cups flour
1 tsp baking powder
1/8 tsp salt
1/2 tsp lemon zest (optional)
2 tsps vanilla extract
Preheat oven to 350F. Butter and flour a large bundt pan.
Beat egg whites to soft peaks. Remove into a bowl. Then add egg yolks and sugar and beat until pale yellow. Add vanilla extract. Add half of the flour mixture (flour, baking powder and salt) and beat until combined. Then add remaining half and mix until incorporated. Add half of the meringue and mix with a spatula. Then add remaining and mix. Place into your prepared bundt pan and bake for 50 minutes to an hour. Place a toothpick in the center and if it's clean, then you can remove the cake from the oven. Let the cake sit for about 5 minutes, loosen the edges with a butter knife and invert to a plate.
