Savoring Tradition: Rajasthani Royalty on Your Plate - Junglee Maas, an Exquisite Dish
It is said that when the royals went hunting, they would not carry too much spices, and the ingredients used in this dish were the ones that were readily available in nearby vilages. Some say they carried lots of spices and stuff, but once when all spices except salt and dry red chilli finished, this dish was born and hence, junglee maas. Whatever the story, this dish uses minimum of spices, and the flavours of meat come out beautifully.
Also, mutton tased best if slow cooked in a heavy bottomed utensil, and that is the original way of making it, so we also used a heavy bottomed handi and cooked it on low flame.
Ingredients:
250-300 gms Mutton
1 kadchi ghee
4-5 madhania whole dry red chilli (if not available, use 2 kashmiri whole red chillies for colour and 3-4 whole normal dry red chillies for spiciness)
One small pod of garlic peeled only (optional)
Salt to taste
Method:
Melt ghee in a heavy bottomed utensil (it can be handi, pan, kadhai or pateela - we used copper based steel handi). Do not let the ghee hot otherwise mutton will stick to the bottom.
As soon as ghee melts, add mutton pieces and stirring continuously, roast for 8-10 mins then add garlic, salt and whole red chillies. Cover and cook for at least 30 mins on low flame stirring occasionally.
By this time, mutton will release its water and chillies would have released their color. Keep ooking covered till the water that mutton released has evaporated.
Now add around 1 cup water, or slowly keep on adding water in portions while roasting the mutton. Cook till the added after evaporates and the ghee surfaces.
Chek for doneness. By this time, the large pieces will automatically have broken into small pieces, and mutton will start peeling off the bone. The whole process takes between 2 to 2.5 hrs on low flame. If you do not have time then pressure cook, but it will not have the same taste.
Plate out, serve with ghee waali chapati, tandoori roti or khameeri roti.
