Aalu Chana ki Sabzi 🍲

Simple, comforting and full of desi flavors 🤎
Perfect with roti or rice!

Ingredients:
• Brown chana – 1 cup (soaked)
• Potato – 2, boiled
• Onion – 2 medium, sliced
• Tomato – 2, puréed
• Mustard oil – 1 tbsp
• Cumin seeds – 1 tsp
• Dry red chilies – 2
• Asafoetida (hing) – a pinch
• Bay leaf – 1
• Ginger–green chili paste – 1.5 tsp
• Turmeric powder – 1tsp
• Coriander powder – 1 tsp
• Cumin powder – 1 tsp
• Kashmiri red chili powder – 1 tsp
• Meat masala or chhole masala – 1 tsp
• Garam masala – 1 tsp (added later)
• Salt – to taste
• Water – 1.5 cups
• Fresh coriander – for garnish

Recipe:
1. Heat 1 tbsp mustard oil in a pressure cooker.
2. Add cumin seeds, dry red chilies, hing, and bay leaf.
3. Add ginger–green chili paste and sauté briefly.
4. Add chopped onions and cook until lightly golden.
5. Add tomato purée and all basic masalas
(turmeric, coriander powder, cumin powder, Kashmiri red chili powder, meat/chhole masala).
6. Add soaked brown chana and boiled potatoes, sauté for 1–2 minutes.
7. Add water and salt, close the lid and cook for 4 whistles.After the whistles, let the pressure release completely.
8. Open the lid, add 1 tsp garam masala and fresh green coriander. Serve hot.
