Aji Verde Chicken Tacos 🌮🔥
These tacos are a flavor explosion you’ll want to make again and again!

I seasoned chicken thighs with our Reaper Rub and cooked them over indirect heat on a charcoal grill until they hit 165°F internal. Then I moved them directly over the coals to char both sides.

While the chicken cooked, I made the Aji Verde sauce:

2 whole serrano peppers

1 bunch cilantro

3 cloves garlic

Juice of 1 lime

1 tablespoon of our Beef Rub

2 tablespoons extra virgin olive oil

¼ cup mayonnaise

2 tablespoons sour cream

¼ cup parmesan cheese

Blend until smooth and creamy.

To finish, I chopped cucumbers and cherry tomatoes. Once the chicken was done resting, I sliced it thin, toasted tortillas on the grill, and built the tacos with chicken, cucumbers, tomatoes, a drizzle of Aji Verde sauce, and a sprinkle of parmesan.

These tacos are bold, zesty, smoky, and spicy with every single bite.
