My Favourite Focaccia Recipe!

A couple of weeks ago, I came home after the girls did a shoot in our house and I have to say, nothing beats the smell of freshly baked bread…. especially when its HOMEMADE focaccia! 🤤 But what I didn’t expect was for it to look THIS CUTE!! I love this idea to make this classic bread recipe a little more fun! But honestly, I just can’t get over the little Toadstool loaf haha 🍄 See below for the recipe!

INGREDIENTS (makes 10-12 servings):
2 ¼ tsp active dry yeast
2 tsp honey
5 cups all-purpose flour
1 tbsp kosher salt
6 tbsp extra-virgin olive oil, divided, plus more for your hands
4 tbsp unsalted butter, plus more the pan
A pinch of flaky sea salt

TOPPINGS
Shallots
Parsley
Dill
Tomatoes
Cherry tomatoes
Small bell peppers
Basil
Bocconcini

DIRECTIONS
Begin by whisking together the active dry yeast, 2 tsp honey, and 2 ½ cups lukewarm water. After about 5 mins, when there’s some foam, add 5 cups of all-purpose flour and 1 tbsp of kosher salt, and give it a good mix until there aren’t dry streaks anymore. Now, take a nice big bowl and pour 4 tbsp extra-virgin olive oil into it. Plop the dough into the bowl and make sure it’s coated with oil by giving it a good turn. We were in a bit of a rush so instead of chilling it in the refrigerator overnight, we popped a lid on it and let it rise at room temperature until it doubled in size! It took us 3-4 hours. Once its risen, you want to gather the edges of the dough farthest from you and fold into the center. Give the bowl a quarter turn and repeat 3 more times. You basically want to deflate the dough as you’re shaping it into a ball! Now, plop the dough to a pan lathered in oil. Let rise again but this time, uncovered and in a dry warm spot until its doubled in size. This will take at least 1 ½ hours. Preheat oven to 450 F. Meanwhile, check to see if your dough is ready by giving it a good poke! If it springs back slowly, it is ready! Dimple the focaccia with your fingers and have fun arranging your toppings! Lastly, drizzle with olive oil, sprinkle with flaky sea salt, and bake for 20-30 mins! Keep an eye out until its golden brown. And there you have it - a beautiful homemade loaf of focaccia!
