Quick Chicken & Andouille Gumbo

Another incredible dish from the great State of Louisiana. Put a little South in your mouth with a comforting gumbo.
Never walk away from your roux.
Be very careful, use a long handled whisk or spoon.

Quick Chicken & Andouille Gumbo

Recipe:
1/2 cup vegetable
1/2 cup flour
1 cup chopped celery
1 cup chopped onion
1 cup chopped green bell pepper
3-4 cloves garlic minced
3 bay leaves
4 cups of cooked chicken and smoked turkey, shredded
10 ounces of andouille or your favorite smoked sausage cut into rounds
8 cups chicken stock
12 ounces frozen, sliced okra
1 teaspoon garlic powder
1 teaspoon cayenne pepper
salt and pepper to taste

In a medium bowl combine the celery, onion and green pepper and set aside.
In a heavy bottomed dutch oven over medium high heat. Pour the oil into the pot, lower heat to medium and add the flour. Whisk constantly until the roux becomes a reddish brown, about 5 minutes.

Add the onions, celery and green pepper to the pot and turn the heat off. Toss the vegetables to coat them in roux, about 3 minutes.

Add the garlic and bay leaves then the stock, simmer for about 30 minutes to cook the vegetables and allow the flavors to meld together.
Add the okra, chicken, turkey, sausage, garlic powder and garlic powder. Taste and correct the seasoning. Simmer another 20 minutes.
Serve over rice and enjoy!
