How To Slice Pork for Filipino BBQ Skewers, Kabobs
How to or tips to slice pork shoulder for Filipino BBQ
Filipino BBQ Recipe:
* 2-3 lbs. pork shoulder sliced into thin pieces = ~10 x 10” skewers/sticks
Marinade ingredients
* 1/2 cup soy sauce
* ½ cup juice extracted from calamansi or lemon
* 1 1/2 cup banana ketchup
* 6-8 tablespoons dark brown sugar
* 2 tablespoons garlic powder
* 1-2 teaspoon ground black pepper
* 1 ½ cups lemon or lime soda
Instructions:
* Arrange the pork/chicken slices in a large bowl.
* Pork ~3/4”-1” square slices (refer to video tips)
* Chicken ~1” wide slices
* Add all the marinade ingredients. Then mix all meats in marinate well. Cover the bowl and marinate for at least 3 hours. Note: I strongly suggest marinating overnight for best results. *Tip for quicker marinate time in video
* Tip: soak skewers in hot/warm water ~15min before preparing skewers
* Fasten the marinated pork together using bamboo skewers (step by step in video)
* Heat-up the grill ~500° Start to grill your Filipino Style pork BBQ for 3 to 5 minutes per side until the meat is thoroughly cooked ~Make sure to always baste the BBQ when flipping it over. Note: the basting/mop sauce ingredients are the same as the marinade ingredients minus the lemon soda.
Cucumber, Tomato Salad (for ~4 people)
Ingredients:
1 cucumber sliced or diced
4-6 cherry tomatoes halved or quartered
1/4 red onion cut thinly long it shorter pieces
2+ tblspn apple cider
1/4-1/2 lemon squeezed
Salt+Pepper ground to taste
Crumbled feta cheese or similar
Preparation/playing:
Start with cucumber/red onion mix adding just a taste of apple cider vinegar
Then add the tomatoes + squeezed lemon + S + P and crumbled feta cheese (do not mix so as to keep color)
