Strawberry Crunch Sponge Cupcakes

CAKE BATTER

Mixture 1: Meringue
5 egg whites
1/2 cup granulated sugar

Mixture 2:
5 egg yolks
1/2 cup granulated sugar
1/3 cup milk
1/4 cup vegetable oil
1 tsp strawberry flavoring
Red or pink food coloring of choice
1 cup cake flour
1 tsp baking powder

WHIPPED CREAM FROSTING
2 cups cold heavy whipping cream
1 cup confectioners sugar
1 Tbsp dry vanilla pudding mix

CRUNCH TOPPING
1 stick room temp butter (use 1/2 for strawberry gelatin and other half vanilla pudding)
1 cup all purpose flour (1/2 cup for each flavor below)
3 oz strawberry gelatin
3.4 oz vanilla pudding mix
Serving size: 18-20 cupcakes
