Karen's Kitchen | Halloween Pumpkin Chiffon Pie

Lahaina makes her infamous (Halloween) Pumpkin Chiffon Pie!

❐ INGREDIENTS ❏

CRUST:
10 gluten free vanilla sandwich cookies
14 gluten free  ginger cookies
8 tbsp of melted butter
1 tsp of granulated sugar

PUMPKIN FILLING:
2 packets of unflavored gelatin (5 tsps)
2 tsp of pumpkin spice
3/4 cup of granulated sugar
3 egg yolks, 3/4 cup of whole milk
1 can or 15 oz of unsweetened pumpkin puree
3 egg whites
2 tbsp of granulated sugar

WHIP TOPPING:
1 and 1/4 cup of heavy cream
1/4 cup of granulated sugar
1/4 cup of sour cream
