SUFGANIYOT | MILK FREE DONUTS | BEST DOUGH RECIPE FOR PACZKI-DOUGHNUTS-BEIGNETS, סופגניות & FRITTERS
My amazing grand-mother shared this recipe to make amazing and foolproof milk free donuts. So whether you called them Sufganiyot (סופגניות) Paczki, beignets, fritters, doughnuts or donuts: this recipe is for you!
It a great recipe to use as starting point to learn how to make donuts at home from scratch without buttermilk nor milk!
it is an excellent dough to make a sufganiyot recipe, an easy paczki recipe ( it is a Polish donut) as well as the famous fritters ( in UK) or the beignets in France!
This recipe is easy and yields delicious donuts!

1:00 Add the eggs, plant based milk, magic ingredient and margarine
1:05 Add the proofed yeast to the wet ingredients
1:30 add flower slowly

2:00 roll the paczcki dough
2:15 add fritters to oil
2:30 flip donuts when they are tanned
2:45 place doughnuts on paper towel
2:55 toppings on milk free donut
3:05 filling for milk free donuts jam
3:15 filling for milk free doughnuts custard
3:30 filling for doughnuts ganache

INGREDIENTS:
DRY INGREDIENTS:
* 625 g of All Purpose Flour, plus a bit more if the dough is sticky
* 18 g of traditional granulated yeast ( in USA equivalent to 2 small packets)
* 43 g of Granulated Sugar
* 4g of Salt
WET INGREDIENTS:
* 100ml of warm plant milk ( warm it to 110*F) the one I use is Ripple( you can use cow’s milk as well)
* 34g of unsalted melted margarine ( you can also use butter )
* 34g of melted vegetable Shortening ( that is part of the secret for a super silky dough)
* 2 Eggs
** you can proof your yeast with the vegan milk, the sugar and the yeast!
TOPPING/FILLING IDEAS:
* Powdered sugar to cover doughnuts/sufganiyot/paczki
* About 100g of Jelly or filling of your choice ( some of our favourite custard, chocolate ganache and dulce de leche:)
* INGREDIENTS:
Ingredients secs:
625 g de farine tout usage avec un peu en reserve si la pate reste collante
18 g levure sèche
43 g Sucre granule
4g de sel
Ingredients Liquides:
100ml de lait Tiede vegan j'utilise un lait riche comme le lait Ripple ( environ 50*C)
34g margarine non salee fondue ( vous pouvez aussi utiliser du beurre)
34g Shortening vegetal fondu ( le secret pour une pate super lisse)
2 oeufs
**pour faire preparer votre levure: vous pouvez le faire avec le lait vegan: lait-sucre et levure:)***
Sucre glace ou sucre granule pour le glacage
Environ 100g de gelee, confiture ou tout autre gaterie de vote choix ( creme patissiere, ganache au chocolat, dulce de leche) !
