Armenian Pickled Vegetables Recipe:

Guys, this is an easy one. I have got this wonderful recipe from an authentic source (my armenian girlfriends mum! :-P) and it delivers. Those pickles are crunchy, tangy but not too sour if you put them into the fridge early enough.

Hit me up with any questions and suggestions and here is the recipe:

Ingredients:
1/2 head of White Cabbage
4-5 carrots
3 sticks of celery
250g (1/2lb) of green beans
5-7 small pickling cucumbers (not the ones I used!)
1 head of cauliflower
garlic to taste

the brine:

Here the ratios are important. You want to have 2% of water weight in salt. I had 3l of water (which equals 3000g) 3000g*0,02= 60g. You can adjust according to your amounts

60g of salt
