Guyanese Conkie, Wrapped in Banana Leaves.

.Sandy's Backyard Kitchen Conkie Recipe. Guyanese Style.

This banana leaf-wrapped recipe is a sweet buttery dessert and it's better eaten warm. Some prefer cold also. It has very much great nutrition for our health and body because of the pumpkin and coconut and all the great awesome spices.

Mixed all dried ingredients first.

2 cups Cornflour / not with grain
1 cup Sugar / brown if possible
1\2 all-purpose flour, optional
1 tbsp Ginger Powder
1 teaspoon Salt & Pepper
1 1/2 teaspoon Nutmeg
1 tbsp Cinnamon
1 tbsp Vanilla extract or Essence
11\2 cup finely grated Pumpkin
1 cup grated fresh Coconut
1/2 cup Coconut Milk or Water
5 TableSpoon Butter or Margarine

Banana leaves fresh or frozen. Foil wrap can be used also.
