How to Make Cabbage & Hoecakes

We welcomed Ms. Henrietta Releford Weaver to our kitchen today, for a lesson in cooking cabbage and hoecakes. She makes her cabbage a bit healthier by leaving out the fat, but the dish is flavorful and delicious nonetheless!

Cabbage Recipe

1 med. cabbage
1 red pepper
1 orange pepper
1 yellow pepper
1 onion
2 garlic cloves
2 or 3 fresh carrots
4 tablespoons extra virgin olive oil or coconut oil
fresh thyme
salt, black pepper and sugar to taste

Directions:
Remove the dark green leaves from cabbage head. Wash leaves with paper towel and pat dry. Roll leaves, cut in 1/8 inch strips. Cut cabbage head in quarters. With a sharp knife, cut remaining cabbage in small strips, wash. Peel carrots cut in strips. Saute ingredients until tender.
