TANJIA! Moroccan Food for Men, Cooking and Trying Tanjia for the First Time طعام مغربي SMEN!

Thanks to our Moroccan host Bhja for demonstrating excellent Moroccan hospitality, we prepared a tanjia to try some new Moroccan food. Bhja makes an amazing tanjia, we will have to collaborate on some future American and Moroccan food projects.

Associated with working men, tanjia is a low maintenance dish that is full of meat. Well spiced with smen, a fermented Moroccan butter, tanjia is tangy with the addition of preserved lemon. Ras hanout, cumin, saffron, and preserved lemon combine with meat garlic and onion to make a succulent and flavorful dish. We decided to eat it with msemmen instead of Moroccan Khobz.

Traditionally cooked at a communal oven, such as a Hamam. It can even be cooked over night, especially with meat such as camel, beef, or sheep. It is a slow cooking device, the tanjia, is similar to a Greek urn. It was so good, next time I would like to drink the juices out of it. Moroccan food continues to surprise me with its diversity and unique cooking methods in Moroccan cuisine and Moroccan food.
