Cashew Cream Cheese

Mmmmm...I love this recipe! Creamy, smooth, rich, satisfying and only made with plants! I've made this recipe for family and friends and have a few addicts on my hands. Since it was such a success, I thought I should share this recipe here.
Super versatile. You can make any flavor cream cheese. You can make it as thick or thin as you like. It works great as a dip and add a touch of sweeter and you have an amazing frosting. The list goes on!

Recipe--
Ingredients-
1 cup of raw cashews, soaked for 8-12 hours
2 tablespoons of Nutritional Yeast
1/4 cup fresh lemon juice
1 tablespoon of Avocado oil- or any oil of choice
1/2 teaspoon salt
2 teaspoons Apple Cider Vinegar
1. Measure out raw cashews and pour them into a medium sized mixing bowl. Pour enough water to cover an inch above the cashews. The cashews need room to soak and will swell slightly in bowl. Cover with a tea towel and leave at room temperature. Soak cashews for at least 8 hours, 10-12 is best.
2. Drain cashews of their soaking liquid and rinse well. transfer cashews into a high speed blender or food processor bowl and blend until smooth. This will take a few minutes but is worth the effort.
3. Once cashews are smooth, pour in all of the liquid ingredients. Blend until everything is well incorporated, being sure to stop and stir as needed to ensure proper mixing and pureeing. Add in the remaining ingredients and blend again until combined.
4. Remove mixture from vessel and enjoy!
*** Variety is the spice of life, so why not try other combinations and flavors! Follow all of the steps above to the end then stir in your additions to change up your average cream cheese.
-GARDEN VEGETABLE CREAM CHEESE- 1 tablespoon dry Dill weed & 1/3 cup freeze-dried soup veg mix that has been rehydrated. Mix together in 1 recipe's worth of cream cheese and enjoy!
-CINNAMON CREAM CHEESE- 2 teaspoons of Agave syrup & 1 tablespoon of ground Cinnamon. Stir in both ingredients to 1 recipe's worth of cream cheese and Enjoy!
BLUEBERRY (or other Fruit flavored) CREAM CHEESE- 3 tablespoons of fruit preserve of choice. Stir into 1 recipe's worth of cream cheese and Enjoy! Some excellent choices for other fruit flavors would be: blueberry, strawberry, peach, mango, raspberry, cherry, marionberry, and even grape.
-MEXICAN BEAN DIP- 1 recipe's worth of cream cheese, half a can of refried beans, 1 heaping tablespoon Chili powder, and 1 teaspoon of your favorite hot sauce.
