Roasting the Perfect Dark Mocha ☕

A skilled coffee roaster uses a special tool called a trier to pull hot beans from a large green Meister 10 machine. This long metal rod acts like a scoop to check how the dark mocha blend is cooking inside the heated drum. He carefully adds these steaming samples to a wooden tray with three sections. By comparing the new beans to the older samples already on the tray, he can see exactly how the color changes from a light brown to a rich dark chocolate shade.

Once the beans reach the perfect dark roast, the roaster pulls a lever to open the machine. A thick cloud of fragrant steam fills the air as thousands of oily beans tumble out into a giant circular cooling tray. Metal arms spin around like a ceiling fan to stir the beans and keep them moving. This quick cooling process stops the cooking immediately so the coffee stays crunchy and develops a bold smoky flavor without burning.
