Healthy Mocha Fudge Cake and More Chocolate Recipes 🌿#ytshorts #nutritionistapproved #birthdaycake
Ingredients
For the cake
* 150 g Medjool dates (seedless)
* 1.5 cups milk
* 1 tbsp coffee
* 1/4 cup butter
* 1 cup flour
* 1/4 cup cacao powder
* 1/2 tsp baking powder
* 1 tsp baking soda
* Chopped roasted walnuts
* Optional: chocolate chips
For the chocolate ganache
* 1/2 cup coconut cream
* 1/2 cup dark chocolate
* 1/2 cup cacao powder
* Vanilla essence
* Optional: honey for extra sweetness
Method
Step 1: Soak the dates
Add the Medjool dates and milk to a pan
and heat gently till the dates soften slightly.
Switch off the flame and mix in the coffee
while the milk is still warm.
Keep this aside for some time so the dates
soak properly. This step gives the cake an
incredibly deep mocha flavour and helps
create the soft fudgy texture.
Step 2: Prepare the ganache
In a bowl, combine:
* coconut cream
* dark chocolate
* cacao powder
* vanilla essence
Microwave for about 1 minute till the
chocolate melts.
Mix everything well till smooth and glossy.
Add honey if you prefer a sweeter ganache.
Refrigerate this while the cake batter is
prepared.
Step 3: Blend the date mixture
Blend the soaked dates, milk and coffee
mixture till smooth and creamy.
Transfer this to a mixing bowl and add the
butter.
Step 4: Add dry ingredients
Using a sieve, sift in:
* flour
* cacao powder
* baking powder
* baking soda
Fold gently till combined.
Add chopped roasted walnuts and
chocolate chips if using.
Do not overmix.
Step 5: Bake
Transfer the batter into a lined baking tin.
Bake at 180°C for approximately 45
minutes.
Check in between depending on your oven.
IMPORTANT:
Do not overbake the cake.
The toothpick should come out with
slightly moist crumbs and not completely
clean. The cake continues to cook while
cooling, and this step helps maintain the
soft, gooey fudgy texture.
Final Step
Allow the cake to cool slightly and top
with the chocolate ganache.
