Lacto Fermented Sweet Potato Beverage | Probiotic Enzyme Drink
A traditional tonic beverage from Guyana. We adopted a recipe from “The Art of Fermentation” by Sandor Ellix Katz. This probiotic soda is slightly effervescent, fizzy and aromatically spiced. Another way to get more probiotics and enzymes into diets.
Original recipe has egg shell to balance the acidity level (which we chose not to use because we will use grated potato after finishing fermentation in the baking recipe) and has a culture starter with whey, ginger bug or water kefir which we chose not to use because we want to show you that you can do it without a starter and only takes a little more time to ferment.
Ingredients
• 1 medium sweet potato (400 g)
• 3/4 cup sugar (145 g)
• 8 cups of chlorine free water (half-gallon)
• 1 lemon juice
• seasonal spices like clove, cinnamon, nutmeg (optional)
Instructions
1. Wash, Grate & Rinse sweet potato with cold water until the water is clear water, this is to remove the starch.
2. Combine all ingredients in a jar, leaving 1-2 inch of headspace.
3. Cover with a coffee filter or clean cloth secured with a rubber band.
4. Set at room temperature to ferment for 3 to 5 days or until it is bubbly and beginning to get tangy and sour. The longer it sits to ferment, the more sugar the bugs will eat up and the sourer it will become. So taste it every day until it reaches your level of sour you enjoy. For myself, day 5 is good.
5. Stir the jar 2 times/day to protect from mold.
6. Strain mixture and fill up your bottles 2/3 full to allow room for gas expansion.
7. Let them sit at room temp. to carbonate for 1-2 days until it reaches your fizzy level.
8. Transfer your bottles to the fridge to slow fermentation. They will keep in the fridge up to 1 month. Serve chilled. Enjoy!!!
* Temperature here around 65-70 f (18-21 c)
• A cooler room will slow fermentation while a warmer room will speed it up.
• Remember, over fermenting will cause carbonation and at room temperature for too long without burping may cause the soda to make a mess.
** leftover sweet potatoes after straining can be used in pancake or bread recipe. I plan to make sourdough sweet potato dinner rolls, stay tuned for that.
