RECIPE: Sofie's BACON & EGG Breakfast Sandwich!

If you're looking for a tasty Sunday morning breakfast, LOOK NO FURTHER! This Bacon & Egg Breakfast Sandwich is pure indulgence with crispy bacon, cheesy scrambled eggs, & tomatoes, all brought together between two toasted brioche buns! I'm hungry just thinking about it!!

Ingredients:
1 tbsp olive oil
400g cherry tomatoes
1 tbsp butter
5 large free range eggs
100g cheddar cheese, grated (optional)
2 brioche buns
6 slices of streaky bacon, cooked until crisp
Sea salt & ground black pepper
