This week we've got a throwback to my SECOND EVER cookbook "Kitchen Hero" & one of it's most popular recipes, Sofie's Squashed Potatoes! These crispy delicates SUPER EASY & are a great addition to any feast you're having at dinner time!

1kg baby potatoes
3 tbsp olive oil
4 garlic cloves
2 springs rosemary
Sea salt and freshly ground black pepper
