Instant Pot BBQ Ribs (Tender & Delicious)

We usually cook our ribs on an outdoor smoker or in the oven but decided to try the instant pot to save time. I honestly did not expect they would come out so delicious and tender. If you don't have an instant pot you can cook in the oven. Just place the rubbed ribs on a rack set on top of a sheet pan. Pour 1 cup of water and 3 tablespoons of liquid smoke in the sheet pan, cover tightly with foil and cook for 3 hours at 275 degrees. Ingredients: 1 rack of pork ribs 1/2 cup bbq sauce 2 tablespoons yellow mustard 1 cup chicken broth 1 teaspoon liquid smoke (optional) Rub: 1 teaspoon granulated garlic (or powder) 1 teaspoon granulated onion (or powder) 1 teaspoon smoked paprika 1 teaspoon brown sugar 1 teaspoon chili powder 1 teaspoon kosher salt 1/2 teaspoon pepper 1/4 teaspoon cayenne pepper (more if you like spice) Start by combining the rub ingredients and set aside. Rinse and dry ribs. Cut in half so they'll fit in the pot. Start with the under side of the ribs (where the bones are visible). Cut several slits in the membrane so the rub can really get in there. Brush half of the mustard on the ribs, sprinkle half of the rub and press in to the meat. Flip over and brush mustard and the remaining rub. Place trivet in the bottom of the pot. Add chicken broth and liquid smoke. Put the ribs on the trivet (so they are not in the liquid). Place the lid on, set the valve to "sealing position". Pressure cook for 25 minutes. Allow the instant pot to natural release for 15 minutes. Release steam and remove lid. Place ribs on a sheet pan and brush on bbq sauce. Broil in the oven for 6-8 minutes. Enjoy!
