Pat the salmon fillets dry with paper towels. Lightly season both sides with the paprika, salt & pepper. 2. In a large non-stick skillet, heat the olive oil over medium-high heat. Gently lay the fish in the hot oil & cook until the fish is medium-rare & the center of each fillet reads 110°F on an instant-read thermometer, about 2.5 minutes per side. Transfer the salmon to a plate or baking sheet, tent with aluminum foil, & set aside. 3. Discard all but 1.5 tablespoons of the fat from the skillet. Return the skillet to medium-high heat, add the garlic, and cook, stirring, for 30 seconds. Stir in the coconut milk, lemon juice, mustard, and capers. Cook, stirring regularly, for 4 minutes. Remove the skillet from the heat and stir in the dill. Taste the sauce and adjust the seasoning with more pepper and lemon juice, if desired.
