How to Use Artichoke Leaves - Artichoke Leaf Soup - Vegan Recipe

How to cook artichoke leaves, once they've been removed from the artichoke heart. The easiest method of using the leaves is to boil them into a broth and make a soup or use the broth to cook grains, pasta, or other vegetables. For this recipe, we'll make the artichoke leaf broth, then boil potatoes in it and puree it into a creamy artichoke leaf soup, without dairy. ARTICHOKE LEAF SOUP RECIPE Ingredients: Leftover leaves from cleaning an artichoke one baking potato (starchy potato) optional aromatics: garlic, bay leaves, lemon zest and juice, rosemary, thyme salt and pepper to taste Recipe summary: clean the leaves, add to a soup pot. Cover leaves with water by an inch. Add your preferred aromatics. Boil for 20-30 minutes, until the leaves are softened. Remove the leaves. You can boil it down to concentrate the flavor. For soup, slice a starchy potato and boil it in the artichoke broth. Mash the softened potato with a masher. Add more aromatics.
